Critical: Hands - When to Wash* (corrected on site) Observation: A food employee failed to wash her hands before engaging in food preparation after handling soiled utensils or after engaging in any activity which may have contaminated her hands.
Correction: Instruct food employees to clean their hands before food preparation or working with clean food equipment as often as necessary to prevent cross contamination when changing tasks.
Food Storage Containers - Identified with Common Name of Food Observation: Unlabeled container of brown sugar..
Correction: Label containers of food that cannot be readily identified with the common name to avoid the mistaken use of an ingredient.
Critical: Equipment and Utensils - Before Use After Cleaning* Observation: The high temperature mechanical dishwasher is not sanitizing.
Correction: After cleaning and rinsing, sanitize food equipment in the 3-vat sink until the dishwasher is working properly.
Critical: Equipment and Utensils - Hot Water and Chemical Sanitizing* (corrected on site) Observation: Due to improper operation of the mechanical warewashing machine, equipment food-contact surfaces and utensils are not sanitized after cleaning. (See 12 VAC 5-421-1680)
Correction: Repair the unit so that achieving a utensil surface temperature of 160°F can be measured by an irreversible registering temperature indicator (e.g. thermolabel and maximum registering thermometer). Discontinue use of mechanical warewashing machine and convert to use of 3-vat sink wash, rinse and chemical sanitization.

Correction: Store clean equipment in a dry location protected from splash. Recommend an approved splashguard on the right side of the handsink to protect food items and clean equipment, and make better use of limited storage space in kitchen.
