Violations:
1550 - The grill table is not sealed to adjoining equipment or walls. Seal the unit to adjoining equipment or walls since it is exposed to spillage or seepage.
3080 - Less than 50 foot candles of light was noted in the food preparation areas. Provide at least 50 foot candles at a surface where a food employee is working with food or working with utensils or equipment such as knives, slicers, grinders, or saws where employee safety is a factor
Comments:
Pre-opening inspection conducted. Provide adequate lighting at all food preparation areas (50 foot candles). Ensure the following: 1. The crock pots used are easily cleanable and able to be submerged in the three compartment sink. 2. Chlorine sanitizer test strips are equiped with color chart. 3. Seal the wood of the screen door. Discussed options for maintaining product at 41 F or below. One option discussed was to take pre-sliced deli product and pre-portion into 1/2 to 1 lb units wrapped in plastic wrap. Once the original package of deli meats/cheeses are opened a discard date of seven days must be placed on the opened package as well as the pre-portioned packages. Monitor the temperature of the food to maintain the food items at 41 F or below. The vegetables will be pre-cut and portioned. It is the responsibility of the operator to notify the department should your approved location to dump your on-board waste-water changes.
