1. This is an inspection to verify the ROP process for this food establishment in addition to a pre- standardization inspection for a new EHS.
2. The proper washing and sanitizing procedures of food thermometers were discussed with the CFM and food employees.
3. The CFM was instructed to daily download and print out the walk in refrigerator ambient temperature recording data (datalogger), in order continuously monitor and ensure that ROP food are kept at proper cold holing temperature.
4. It was recommended to reorganize and maintain the ROP temperature data logs.
  • Hair Restraints - Effectiveness
    Observation: Employees observed working in the food service area without proper hair restraints.
    Correction: Ensure all employees wear hair restraints such as hats, hair coverings or nets, beard restraints, and clothing that covers body hair, that are designed and worn to effectively keep their hair from contacting exposed food, clean equipment, utensils and linens, and unwrapped single-service and single-use articles. This section does not apply to food employees such as counter staff who only serve beverages and wrapped or packaged foods, hostesses, and wait staff if they present a minimal risk of contaminating exposed food
  • Food Storage - Clean and Dry Location (corrected on site) (repeated violation)
    Observation: A tray of bread sticks stored in a next to the handwashing sink, location where it is subject to splash, dust or other contamination.
    Correction: Store food where it is not exposed to splash, dust, or other contamination to prevent contamination.
  • Food Storage - Clean and Dry Location (repeated violation)
    Observation: Boxes of soda syrup stored on the floor or food stored less than 6" above the floor in front of the dry storage area..;Elevate food storage onto approved shelving with minimum 6" legs or casters.
  • Critical: Equipment and Utensils - Before Use After Cleaning* (corrected on site)
    Observation: The food-contact surfaces of the following equipment were not observed sanitized: food themometers
    Correction: After cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use.
  • Critical: Toxics - Storage of Toxic Containers* (corrected on site) (repeated violation)
    Observation: Wiping cloth sanitizer bucket stored next to potato cases under the food preparation table and next to clean equipment and utensils.
    Correction: Containers of sanitizer must be located in an area that is not above food, equipment, utensils, linens or single service items.

At the establishment for general observation following voluntary closing of the facility resulting from "fire suppression" problem. As per the manager, all foods in the affected areas have been discarded and all equipment cleaned and sanitized. The manager was advised to continue cleaning and sanitization of all areas affected. She was further instructed to contact the Fire Marshall and other pertinent entities for additional advice. General observation revealed no evidence of food contamination or potential contaminants. The facility is approved to open for business following implementation of all the above instructions and advice.

At the establishment to investigate a complaint pertaining to cockroach in salad. As per the manager Tisia, all salad components are supplied by Coastal produce company and are all pre-packaged. Following delivery, food is stored in the refrigeration pending preparation and service. General observation of facility revealed no cockroaches (live or dead). The pest control company serving the facility is Ecolab that treats the area twice per month. Discussed my findings with the complainant.

    Correction: Store food where it is not exposed to splash or install an approved durable, and cleanable barrier between the splash source and the food to prevent contamination.
  • Hand Drying Provision
    Observation: No disposable towels were provided at the hand washing lavatory.
    Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials

    Observation: Containers of cleaner are not properly stored to prevent the contamination of food, equipment, utensils, linens or single service items.
    Correction: Containers of toxic must be located in an area that is not above food, equipment, utensils, linens or single service items.
