Violations: Comments:
Overall excellent sanitation. Good overall food temperatures, good handwashing, excellent food storage to prevent cross contamination, good use of utensils and glove to prevent bare hand contact and excellent food safety knowledge by cook. Things discussed:
1) Tongs needed at bar for lemons etc. to prevent bare hand contact
2) Mushrooms cleaned (carefully) at the preparation table, with lid closed, however, does pose some risk of food contamination from soiled mushrooms. Use 3 compartment sink for food prep when cleaning soiled fruits veggies etc.
3) Discussed employee health policy, staff uncertain of policy, suggest review of policy and a poster stating symptom, reportable diseases and policy.

Our records indicate, that only one employee in this restaurant has a valid Health Card. Health Cards may be obtained at the Suffolk Health Department on Tuesdays from 9AM - 11AM and Thurdays from 2PM - 4PM.
