Discussed the following with the operator: food storage and temperatures, utensil handling, employee health and hand washing. Panera Bread online training along with PHD supplemental information meets the food handler training requirement. Food handler cards will be issued once payment is made. Permit issued.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Butter and Gruyere cheese blend were cold holding at improper temperatures (66*F & 68*F)
    Correction: Discard food. Ensure cold foods are held at 41* F.
  • Food Contact Surfaces - Cleanability* (corrected on site)
    Observation: Pot holders were used to handle bread. They are not designed or constructed to be smooth and can not be easily cleaned.
    Correction: Replace the pot holders to provide a food contact surface that is smooth and easily cleanable, free of crevices to prevent build-up of food debris. Gloves or other food-grade utensils may be used.
  • Equipment - Good Repair and Proper Adjustment

    Observation: Observed methods are not being used to control flies and nats.
    Correction: The presence of insects, rodents, and other pests shall be controlled to minimize their presence on the premises by using methods such as trapping devices or other methods as required.
