The proper cooling of potentially hazardous food prepared from ambient temperature to 41° F was discussed with CFM, pre-chill ingredients were recommended.
- Critical: Cooling* (corrected on site)
Observation: Salsa prepared yesterday was at 58°F, noted not being adequately cooled to prevent the growth of harmful bacteria.
Correction: Cool potentially hazardous foods prepared from ingredients at ambient temperature to 41°F or below within 4 hours. A longer time for cooling allows an ideal situation for bacterial growth. This has been shown to be the major contributing factor in many foodborne illnesses.
- Cooling, Heating, and Holding Capacities
Observation: The 2 doors refrigerator next to the pizza prep table was not holding proper temperatures.
Correction: Repair refrigerator of provide additional refrigerator necessary to maintain food items at 41°F. Overstocked equipment does not allow for proper air circulation and/or heat transfer. Improper food storage temperatures are a major contributing factor to foodborne illness.

Observation: Single-service or single-use items found stored in next to the handwashing sink.
Correction: Discontinue storage of clean equipment and utensils in a location subject to contamination.
