Establishment with an adequate metal food stem thermometer, chlorine & quaternary test kit. The quaternary/wiping cloth set-ups were adequate. An adequate chlorine residual was in the sanitizing cycle when tested. Adequate employee health policy in place. Health permit posted & visible. Note: Provide new policy information on the handling of the hot marinara sauce.
  • Equipment - Good Repair and Proper Adjustment
    Observation: The can opener blade is damaged & causing metal fragments when cans are opened.
    Correction: Disassemble the can opener, clean and sanitize the assembly, remove and rotate the blade.
  • Non-Food Contact Surfaces
    Observation: Debris build-up on the green roller racks & fan motor covers in the walk-in cooler.
    Correction: Clean the roller racks & fan motor covers as needed.

    Correction: Provide a detailed cleaning as needed.
  • Critical: Backflow Prevention Device, When Required* (repeated violation)
    Observation: Observed a hose attached to a faucet fixture. The hose extended below the flood rim level of the sink basin.
    Correction: Install an approved backflow prevention device or alter the length of the hose to provide the necessary separation between the water supply and the flood rim level of the sink basin. The minimum allowable separation distance must be at least 2x the diameter of the water supply inlet and at least 1 inch.

    Correction: Repair, replace, and/or maintain the calibration of gauges for accuracy and function in the intended range of use.
