  • Critical: Reheating for Hot Holding* (corrected on site)
    Observation: The cooked rice inside Warmer was not reheated to a sufficient temperature and time to eliminate pathogenic bacteria.
    Correction: Rapidly reheat the Rice for hot holding to 165°F or above within 2 hours and then return it to the Warmer to hot hold.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Found the following: (1) The Prep Station Make unit was not operating at proper temperature. found foods cold holding between 45 F and 48 F
    Correction: and (2) Both W-in coolers were operating a marginal temperatures. Foods were cold holding between 43 F and 45 F.
  • Critical: Ready-to-Eat - Potentially Hazardous Food - Disposition* (corrected on site)
    Observation: According to the ""consume by"" date on the prepared ready-to-eat (RTE) Beef Stew inside W-in cooler #1, the Beef Stew should have been discarded one day ago.
    Correction: Discard the food at this time and ensure all prepared RTE food is served, sold or discarded by the ""consume by"" date. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.
  • Plumbing System Maintained in Good Repair
    Observation: One of the urinals inside the public men's washroom was broken.
    Correction: Repair and maintain all plumbing components and fixtures.
  • Toilet Room Receptacle Covered
    Observation: There was no cover to the feminine napkin refuse container inside the employee women's washroom.
    Correction: Provide a cover to the feminine napkin refuse container in the employee women's washroom.
  • Toilet Rooms - Enclosed
    Observation: The door closure devices for both staff washroom doors were broken.
    Correction: Replace the broken self closure devices for the staff washroom doors.
