All temperatures are internal unless otherwise noted. The walk in refrigeration unit needs to be serviced to maintain proper temperature. I reminded the Manager on Duty that No PHF's shall be stored in the unit until it is operating properly.

    Observation: The ice scoop in the back machine was found buried in ice.
    Correction: In use utensils being stored in their contents must be stored handle up.

    Observation: In use wiping cloths in sanitizing solution bucket being stored on the floor.
    Correction: Keep sanitizing buckets off the floor preferably on a shelf under the front counter or prep tables.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Raw chicken in the walk in refrigerator had an internal temp of 48-51F. Product was placed in unit in the past 30 minutes. External thermometer reads 50F and the internal thermometer reads 52F. Unit has a severely damaged door which is rusted and corroded and not properly sealing. Manager informs me that she has called a service technician.
    Correction: Remove ALL Potentially Hazardous Food to the walk in freezer and other refrigeration units until service technician can repair door and adjust the walk in refrigerator's thermostat to maintain a temperature of 41F or below.
  • Sanitizing Solutions, Testing Devices (corrected on site)
    Observation: The quat sanitizing rinse at the 3 compartment sink was @ 400 ppm plus when tested by the inspector. The quat dispenser needs to be calibrated.
    Correction: Manager calls technician for service. Until unit is operating properly, use Quat tabs and ensure proper concentration.
