1080 - Corrected During Inspection There was a metal-banded pastry brush in a utensils drawer in the kitchen We do not allow metal-banded pastry brushes in food establishments. The space between the metal band and the wooden brush is not easily cleanable, at the bacterial level. And the metal band can rust. Replace with a plastic pastry brush with a plastic band (or a plastic brush with no band). This violation was immediately corrected by the establishment management.
3080 - Repeat There is not enough lighting in the back part of the walk-in refrigerator in the kitchen. We require that the lighting be 10 foot candles in all areas in the kitchen (measured 30 inches from the floor). There needs to be an additional light fixture in the unit, which will light the back part in this refrigerator, when one is working in the refrigerator. When one is working in the refrigerator, the light, from the one light bulb in the front of the unit, is blocked/dimmed.

Available chlorine level for bleach-type sanitizer levels always needs to be 50 to 100 ppm, as measured by the test strips which are required to always be on hand. A light cover for this light bulb would meet our requirement. Or replacing this light bulb with a plastic-coated "shatter-proof" light bulb would meet our requirement.
3020 - Corrected During Inspection The hand soap push-button dispener at the kitchen handwashing sink does not work (does not "pump out" handsoap). Immediately replace the broken soap dispenser with a dispenser that works. This violation was immediately corrected. We require that all handwashing sinks have handwashing soap readily available, at all times. We need to do everything possible to encourage frequent and whenever necessary handwashing.

The visible food debris was removed by the manager. The manager was advised that the woven baskets are not easily cleanable, at the bacterial level. We recommended that the baskets be replaced with (plastic-type material) woven baskets, which are easily cleanable, and can be run through the mechanical dishwasher, after each use.
1750 - Repeat There was a white plastic bucket with a lid that said "sour cream" (commercial writing, impregnated in the lid), that contained cooked chicken slices/pieces, in the walk-in refrigerator. Only the food which originally came in this type of container may be stored in this type of container. These containers are specified to be for a single-use only by the manufacturer, and cannot stand up to repeated washing. Replace with tupperware, or some other type of smooth, easliy cleanable, more durable storage container.
