Adequate 3-vat setup, thermometer, and quat test kit. No violations observed. Good practices observed: date-marking, handwashing, clean prep area, good hot/cold holding temperatures. Discussed employee health policy, provided FDA samples, and discussed code changes. Note: cutting boards can be resurfaced rather than replaced under the food code to ensure ability to adequately sanitize the entire surface
