Hot hold potentially hazardous food at 135F or above to inhibit the growth of harmful bacteria.
Facility very clean and well maintained at time of inspection. Please verify cooling process is working to insure that product is properly cooled from 135'F to 70'F (within 2 hours) and from 70'F to 41'F or below (within additional 4 hours).

- 0480 - Unlabeled food containers.
Label working containers with the common name of its contents. Consumers may be allergic to certain foods or ingredients. The mistaken use of an ingredient when the consumer has requested that it not be used may result in severe medical consequences. Liquid foods and granular foods may resemble cleaning compounds. The mistaken use of food from an unlabeled container could result in chemical poisoning. - 0820 A 1 - Critical Chicken hot holding at improper temperatures.
Discard the food and ensure that potentially hazardous foods for hot holding are maintained at 135F or above to inhibit the growth of harmful bacteria. - 0830 - Critical The ready-to-eat (RTE) commercially processed deli meats in the refrigeration unit was not properly dated for disposition after opening.
Mark a "consume by" date on commercially processed RTE foods at the time the original container is opened. If the food is held at 41F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria. - 2720 - Dumpster missing lid.
Cover all waste containers when not in continuous use. - 3200 - Vent filters in the hood system are not being maintained in a clean condition.
Maintain hood system vent filters in a clean condition.
Facility needs to verify cooling procedures are adequate - Rapidly cool product from 135'F to 70'F (within 2 hours), then continue cooling product from 70'F to 41'F (within additional 4 hours).
