Observation: The nonfood contact surfaces of the storage area are not corrosion resistant, nonabsorbent, and/or smooth. Aluminum foil cannot be used as a liner.
Correction: Nonfood contact equipment that is exposed to splash, spillage, food soiling, or requires frequent cleaning must be smooth, durable, and nonabsorbent.

Observation: There was no temperature measuring device located in the refrigerators.
Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.

All violations and inspection report were discussed with the PIC. Hard-boiled eggs were removed from the large whirlpool refrigerator and placed in the small whirlpool refrigerator at 37 degrees.
- Cooling, Heating, and Holding Capacities
Observation: Large whirlpool refrigerator temperature was 58 degrees and not maintaining proper cold-holding temperature of 41 degrees or below.
Correction: Remove all potentially hazardous foods from this unit to other refrigerators until cold holding of 41 degrees or below can be maintained. Improper food storage temperatures are a major contributing factor to foodborne illness.
- Kitchenware and Tableware
Observation: Single serve plastic knives were found handled, displayed or dispensed with the food or lip-contact surface facing upward.
Correction: Store single serve plastic knives with food or lip-contact surface facing downward to prevent contamination prior to use.
