Foods held cold must be stored at less than 41 degrees; foods held hot must be stored above 135 degrees.
Comments:
Hot holding temperatures are good; however, cold holding (buffet) still not holding food temperatures below 41 degrees. Four Seasons will be called back to repair cold holding unit. Sliced tomatoes on buffet not under refrigeration (discarded during follow-up inspection).
Notes: PIC now using checklist (Q&A Inspection) for daily temperature monitoring and sanitation issues. Heritage made adjustment to ice cream machine temperature. Four Seasons made adjustment to hot and cold holding buffet units.
Quat concentration in wiping cloth bucket measured 400 ppm (PIC reported Ecolab pre-set concentration).
