Violations:
- 1570 - Repeat The door gasket to the walk-in cooler is in poor repair.
Repair or replace the door gasket in accordance with the manufacturer's specifications.( Manager states gasket is on order) - 2930 - Repeat Outer opening of the food establishment is not protected against entry of insects and rodents. Observed back door propped open upon arrival and throughout visit.
Protect the food establishment against the entry of insects and rodents by 1. Filling or closing holes and other gaps along floors, walls, and ceilings, 2. Closed, tight fitting windows, and 3. Solid, self-closing, tight-fitting doors. Insects and rodents are vectors of disease-causing microorganisms which may be transmitted to humans by contamination of food and food-contact surfaces.
Today follow-up inspection.
All critical violations from previous inspection have been corrected.
Walk-in door gasket has still not arrived and back door propped open with cardboard to allow easy entry of staff. Discussed installation of door bell or other device to allow for closure of door at all times to protect against entry of insects.

Violations:
- 0220 - Critical The dessert maker is drinking from an uncovered container in the food preparation area.Observed dessert tion area. preparer drinking from regular coffee cup in food prepararation area
Employees may drink from a closed beverage container if the container is handled to prevent contamination of (1) The employee's hands, (2) The container, and (3) Exposed food, clean equipment, utensils, and linens, and unwrapped single-service and single-use articles. - 0440 - Critical The tags for the muscles are not available or are discarded immediately after the container is empty. Observed muscles in WIC that have been removed from original containerer and shell stock tags is missing.
Maintain the identity of the source of shellstock that are sold or served by retaining the shellstock tags or labels for 90 calendar days from the date the container is emptied. - 0470 - Critical Different types of raw animal foods stored in such a manner that may cause cross contamination. Observed raw chicken stored over other raw meats and in same tub as raw pork.
Separate types of raw animal foods from each other such as beef, fish, lamb pork, and poultry during storage, preparation, holding, and display by the following: (a) Using separate equipment for each type. (b) Arranging each type of food in equipment so that cross contamination of one type with another is prevented. (c) Preparing each type of food at different times or in separate areas. - 0820 A 2 - Corrected During Inspection Critical Tomato and meatball mixture cold holding at improper temperatures
Relocate food to a refrigeration unit that is capable of maintaining food storage at 41F or below. Obserrved continer of tomato sauce with meatballs left out on counter over night and at 78 F. Manager voluntarily disarded product. - 1570 - Repeat The door gasket to the walk-in cooler is in poor repair.
Repair or replace the door gasket in accordance with the manufacturer's specifications.( Manager states gasket is on order) - 1960 - Repeat Additional air drying spacer is required in the three compartment sink area ass referenced in plan review letter.
Insall stainless steel wire rack or equivalent over the three compartment sink. (Managert stated this is on order) - 2210 - The backflow or backsiphonage prevention device installed on the mop sink is not identified as meeting standards set by the American Society of Sanitary Engineering. Observed mop sink hose/spray nozzle under constant pressure. Recommend removing nozzle after use or intalling atmospheric pressure dual check valve.
Provide the approved backflow or backsiphonage device for the specific application and type of device to prevent contamination of the drinking water system. - 2310 - Critical The handwashing facility located at the prep sink and in prep room is blocked, preventing access by employees for easy handwashing. Observed radio in prep sink hand sink andf table of glasses blocking handsink in food prep room.
Access to the handwashing facility identified above is to be available during all hours of operation. September 22, 2008 (Routine)
Violations:
- 0610 - Splash guard is required between the left side of the employee hand sink and the food preparation sink due to being directly adjacent.
Install splash guard in this area prior to 9/23/08. - 1570 - The door gasket for the walk-in cooler is in poor repair.
Repair or replace the door gasket in accordance with the manufacturer's specifications. Correct by 9/25/08. - 1960 - Additional air drying space (reference plan review letter) is required in the three compartment sink area. Recommend a cutting board drying rack as well.
Install stainless steel wire rack or equivalent over the three compartment sink by 9/24/08. - 2520 - Critical A direct connection exists between the drain line of the food preparation sink and the sewer line. Install appropriate air gap on the food preparation sink. (Air gap= open air space twice the diameter of the sink drain diameter).
Eliminate the direct connection between the sewer line and the cited equipment. Correct by 9/22/08. - 2810 - 1)Floor or floor covering in the back kitchen is not smooth and easily cleanable. Raise existing grout to render the floor smooth and easily. 2) Seal around all pipes that run through walls to prevent pest habitat. 3) Provide a cleanable surface for the insulated air duct above the cook line. 4) Pull all soda hose lines off floor to allow for better cleaning.
Repair or replace floor or floor covering to make it smooth and easily cleanable. Correct by 9/24/08. - 3080 - Bar areas need increased lighting to allow for proper cleaning of the floors. Operator has agreed to install additional lighting.
Install additional adjustable lighting in bar areas to a minimum of 10 foot candles by 9/24/08. - 3220 - Install mop rack above the floor mopsink.
Operator agreed to install mop rack.
Owner operator has agreed to take corrective actions immediately. Overall substantial compliance with the Virginia Food Regulations observed on this date. Employee health and other food safety information was provided to the management. Reinspection to occur in the next 2-3 weeks to observe food handling practices.
