Observation: Ready-to-eat (RTE) commercially processed non-cultured fluid milk products (milk, half-and-half, cream) in the refrigeration unit was not properly dated for disposition after opening.
Correction: Mark a "consume by" date on commercially processed non-cultured dairy products such as milk, cream, half-and-half, at the time the original container is opened. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days after opening the container, or by the manufacturer's "use-by" date, whichever comes first. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

- Physical Facilities in Good Repair
Observation: Floor in 3-vat sink area is not maintained in good repair. Tiles are chipped or missing. Unfinished wooden blocks under legs of dish machine drainboard. Door to walk-in noted in need of cleaning. Walk-in cooler's shelving is beginning to show signs of rust.
Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities. Establish a regular cleaning schedule as needed for variations in use of a facility (some aspects may need routine cleaning more often than others). Progress in replacing unfinished wood parts (such as under ice machine) with approved material was noted, and staff informed EHS that refinishing other raw wood components was already scheduled.

Observation: Raw food of animal origin holding in a manner that may cause cross contamination of to ready-to-eat food (RTE).
Correction: Separate raw foods during storage, preparation, holding, and display from raw RTE food including other raw food such as fish for sushi or molluscan shellfish, or other raw RTE food such as vegetables, and cooked RTE food.
