The operator provided metal probe thermometers, chlorine and quat test strips and an Employee Health policy at this time.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Multiple TCS food product in the cookline protein products refrigerator drawers were cold holding at improper temperatures ( hamburgers-46F, meatballs-46F - 47F, homestyle chicken patties-47F, sliced cheeses-45F - 46F). The operator rapidly cooled the TCS food items.
    Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.
  • Handwashing - Using a Handwashing Lavatory - No Other Purpose
    Observation: The handwash station at the front smoothie/coffee area is being used for purposes other than washing hands ( a scoop was observed in the front handsink basin).
    Correction: The handwash facility identified above is to be used for washing hands only

Food product in bottom drawer under the hot dog roller was reading between 42-43 degrees F. Employee explained that drawer was recently stocked. Manager added two new thermometers to the unit to monitor the refrigerator.
Excellent food safety program in place.

Machine was serviced this morning. Dish machine now dispensing the proper amount of chlorine residual.

A follow-up to check the dish machine will be conducted on/about December 01, 2014.

    Observation: No chlorine residual present on litmus paper when testing dish machine. Operator called to have machine serviced at the time of inspection.
    Correction: After cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use.

    Observation: Foods in MUT 3 cold holding at improper temperatures. Foods were moved to another refrigerator.
    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below.
  • Equipment - Good Repair and Proper Adjustment
    Observation: MUT 3 was ambient air temperature reading at 43 F. Operator turned down unit. Will stop by later this afternoon to check cooler.
    Correction: Repair the MUT 3 to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the MUT 3, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.
