Comments:Clean and sanitize all food contact equipment not temperature controlled every four hours or as needed to prevent debris build-up. All other cleaning needs to be cleaned every 24 hours. Because thin foods are sold/served a thin probed, instant read, high temperature is required.
April 04, 2008 (Routine)
Comments:Unit not on, facility will need to be inspected at the first event held this year. Need to clean and sanitize facility before operating. Need to clean both refrigeration units before operations begin. Make sure when hot water is on it maintains a min of 100 degree or higher. Grease disposed at fire station in two barrels behind building and picked up by an approved disposal company. Grey water put down the mopsink located in the fire station. Need to update employee health policy.

Comments:All food is bought as needed and with no food being stored over night in mobile unit. No ice used to serve to public, ice is just used for cold storage or chilling items. Be sure all items if cold held are held at 41 or lower. Mobile unit cleaned before every event and during inspection facility is being cleaned after last event.
July 14, 2006 (Pre-Opening)
Comments:This is a pre-opening inspection. Application, plan review materials and fees are due before a permit can be issued. Mop sink was shown. Make sure to keep all Snack Attack II food separate and fridges/freezers locked. Bulbs over warmer aren's shielded or shatterproof.
