The purpose of this visit is a risk factor assessment for a first inspection after being permitted. Several handouts including cooling information, datemarking, handwashing, grease trap maintenance and the current food safety newsletter were provided to the manager. No critical violations observed. Thermo-label activated on the heat sanitizing dishmachine. Quaternary ammonium sanitizer measured at an acceptable level in the sanitize basin of the three vat sink.
