Observation: The thermometer in the under counter reach in cooler is not in good repair and/ or not accurate in the range of use. The thermometer read -15'F when the actual temperature is approximately 36'F.
Correction: Replace the thermometer.

Observation: Less than 50 foot candles of light was noted at the back prep table next to the 3-compartment sink. 20 foot candles measured.
Correction: Provide at least 50 foot candles at a surface where a food employee is working with food or working with utensils or equipment such as knives, slicers, grinders, or saws where employee safety is a factor

Observation: Ceiling tiles are damaged and missing in the mop sink room. Walls are also damaged. The light does not work.
Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

Observation: Floors and walls in the storage room where the 3-door reach in freezer is located is in need of cleaning.
Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.
