Leaving contact information owner to email the Health Department once the veggie side of the preparation bar is repaired and holding food temperatures at 41 or less. Discussed that had sinks are for handwashing only not for food preparation. If the operator needs to wash vegetables this is to occur in the sanitizing side of the three compartment sink. Self closure device has been installed on the back door.
Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site) Observation: Tomatos and veggies holding in the veggie side of the perparation table cold holding at improper temperatures
Correction: Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria. Operator stated that the unit was at temperature in the am. Had staff discard items during the inspection. Operator agreed to use time as a control until the unit is capable of maintaning food temperatures of 41 or less.

Outer Openings - Protected Observation: Outer opening of the food establishment is not protected against entry of insects and rodents. Self closure device needed on the back door.
Correction: Protect the food establishment against the entry of insects and rodents by 1. Filling or closing holes and other gaps along floors, walls, and ceilings, 2. Closed, tight fitting windows, and 3. Solid, self-closing, tight-fitting doors. Insects and rodents are vectors of disease-causing microorganisms which may be transmitted to humans by contamination of food and food-contact surfaces.
