    Observation: Raw foods of animal origin stored over ready-to-eat (RTE) food in the refrigeration unit.
    Correction: Separate raw foods of animal origin during storage, preparation, holding, and display from raw RTE food including foods such as fish for sushi or molluscan shellfish, or other raw RTE food such as vegetables, and cooked RTE food.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site) (repeated violation)
    Observation: FOOD (several items) cold holding at improper temperatures in deli unit.
    Correction: Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria.
  • Critical: Date Marking - Ready-to-Eat - Potentially Hazardous Food - Date Marking* (corrected on site)
    Observation: The prepared ready-to-eat (RTE) FOOD in the refrigeration unit was being held after discard date.
    Correction: Mark the name and "consume by" date on the container of RTE foods at the time of preparation if the food is to be held for more than 24 hours. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

    Observation: Chlorine sanitizing solution was not dosing in dishwash machine.
    Correction: Adjust the chlorine sanitizing solution to a level of at least 100 parts per million when the pH is at 10 or less and the water temperature is 55°F.

    Observation: Observed accumulations of encrusted grease deposits or other soil on the following food contact surfaces: Ice Machine.
    Correction: Clean and sanitize these surfaces for food contact.
  • Critical: Equipment and Utensils - Hot Water and Chemical Sanitizing* (corrected on site)
    Observation: When tested, no sanitizer or a low concentration of chemical sanitizer was found in the wiping cloth bucket storing wiping cloths used on food contact surfaces (Chlorine<50ppm).
    Correction: Provide SANITIZING AGENTS at proper concentration of SANI CONCENTRATIONS and immerse or expose food contact surfaces to sanitizing solution for adequate time.

    Observation: Physical structure is not maintained in good repair: All bare wood on shelving needs to be painted or sealed.
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

    Observation: Glass front freezer in back noted in need of cleaning - evident mold below doors.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

    Observation: EQUIPMENT was observed in a state of disrepair and damaged:
    - Deli Unit not holding proper cold temperature.
    - Walk-in cooler not holding proper cold temperature.
    - Door closure on walk-in cooler needs adjustment.

    Correction: Repair the EQUIPMENT to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the EQUIPMENT, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.

    Observation: The handwash station at the bar is being used as a dump station.
    Correction: The handwash facility identified above is to be used for washing hands only

To deal with deli unit not holding proper cold temps, staff has been rotating product every 3 hours. Discussed continual unit issues with PIC - they will pursue unit exchange.

    Observation: EQUIPMENT was observed in a state of disrepair and damaged: Deli unit not holding proper cold temperature.
    Correction: Repair the EQUIPMENT to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the EQUIPMENT, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.
  • Equipment - Cutting Surfaces
    Observation: The cutting board(s) along the Deli unit are heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.
    Correction: Resurface or discard and replace the cutting boards to provide a food contact surface that is smooth, easily cleaned and sanitized.

    Observation: Observed accumulations of encrusted grease deposits or other soil on the following food contact surfaces: Microwave and Ice machine.
