Discussed with manager'/PIC employee health - exclusion of ill employees and detection of the same in accordance with VDH employee health policy. Observed good handwashing practices and proper glove use. Discussed facility internal control - use of time as a safety barrier for ready to eat foods on the prep line. Discussed routine facility cleaning practices/schedule and food delivery management. Facility dry goods appeared to be stored satisfactorily and not overstocked.
Critical: Food Contact Surfaces - Cleanability* (corrected on site) Observation: 3 reusable plastic food containers found in use that had cracked rims or container sidewalls.
Correction: remove from service and discard damaged reusable containers when the damaged area cannot be easily cleaned and sanitized such as closed or running cracks and fissures.
