  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Observed whipped cream and ham cold holding at improper temperatures. Observed whipped cream at 46 F and ham at 45 F. PIC was not sure why or how long food hand been improperly cold holding > 41 F.
    Correction: Recommend discarding the food and ensuring that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria. PIC discarded food.

Food suppliers are US Foods, Richmond Restaurant, Sam's Wholesale, Loving's produce, grocery stores, and Etzler Farms. Most proteins received raw, fresh, and seafood is received frozen. Per PIC, all food is served fully cooked. Discussed employee health, hot holding, cooling, reheating, date marking, and no bare hand contact. EHS provided Form 1B. Discussed that pest control inside the food establishment must be performed by a licensed pest control operator (LPCO). Facility observed clean and organized.

    Observation: Observed no means to verify that food employees are informed of their responsibility to report to the PIC information concerning their health and activities as they relate to diseases transmitted through food.
    Correction: Recommend maintaining a means to verify that PIC advises employees of their responsibility to report in accordance with law information concerning their health and activities as they relate to diseases transmitted through food.
  • Critical: Equipment and Utensils - Before Use After Cleaning* (corrected on site)
    Observation: Observed the food-contact surfaces of the dishes/ equipment in the dish machine not sanitized. Observed the chlorine in the chemical dish machine at 0 ppm.
    Correction: Recommend after cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use. Recommend immediately discontinuing the dish machine, until repaired, and using the 3 basin sink to clean and sanitize. PIC set up the sanitizer at the 3 basin sink. PIC called for service and technician is scheduled to come tomorrow.
