OBSERVED THE FOLLOWING:
* Observed good food and unit temperatures.
* Thermometers located in all cooling units.
* Employees had clean uniforms/ aprons and had hair restrained. Use of gloves with R.T.E. foods= foods that will not receive further heat treatment.
* Mechanical dish-machine was sanitizing @ 50 to 100 ppm chlorine.
* Quats being used at the 3 compartment sink.
* Operator had test-strips to check sanitizer concentration.
* Operator will provide copy of SERV/SAFE certification.
  • Critical: Milk - Fluid Milk and Milk Products*
    Observation: OBSERVED "HOMEMADE" YOGURT IN GLASS JARS APPROX: 3 JARS AND SEVERAL QUART SIZE CONTAINERS. Milk or milk products from an unapproved source.
    Correction: OPERATOR DISCARDED THE YOGURT AT TIME OF EVALUATION.
    Obtain fluid milk and products from sources that comply with Grade A standards as specified in law.
