    Observation: Chicken breast & beans hot holding at improper temperatures.
    Correction: Hot hold potentially hazardous food at 135°F or above to inhibit the growth of harmful bacteria. -- Foods discarded.
  • Equipment - Cutting Surfaces (repeated violation)
    Observation: The cutting boards along both prep units are heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.
    Correction: Resurface or discard and replace the cutting boards to provide a food contact surface that is smooth, easily cleaned and sanitized.
  • Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils
    Observation: Observed accumulations of dust, dirt, food residue or other debris on the following nonfood-food contact surfaces: fan guards, ceiling, shelves, etc. in the walk-in refrigerator.
    Correction: Maintain nonfood-contact surfaces of equipment clean.

    Observation: Foods in small prep unit cold holding at improper temperatures.
    Correction: Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria. Have unit serviced. -- Foods discarded. Serviceman contacted.
  • Equipment - Cutting Surfaces (repeated violation)
    Observation: The cutting board along the large prep unit is heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.
    Correction: Resurface or discard and replace the cutting boards to provide a food contact surface that is smooth, easily cleaned and sanitized.

    Observation: The nonfood contact surface of the sides of the deep fryers & oven vent has accumulations of grime and debris.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
