This is a routine inspection. In addition, a training for FDA Retail Standard 9 was completed today. Employee Health policy in place, Sanitizer observed within acceptable limit and the test kit used by manager to measure concentration. Observed proper handwashing. The purpose of this visit is to conduct a routine inspection. Employee Health Policy in place. sanitizer observed at an acceptable limit. Facility has test kit. TCS food temperatures observed holding/processed at acceptable limits. Note: no children under 5 years ol served at this school this year.

The purpose of today's visit was to conduct a risk factor assessment. No violations were observed during the inspection.
Per my discussion with the manager at the time of the previous inspection of February 4, 2014, found that the sanitizing sink solution has proper temperature of minimum requirement of 75 F (observed at 82 F today).

10/07/2014Risk Factor
The purpose of today's visit was to conduct a routine inspection. No violations were observed during the inspection.
Found that 2 new food employees are present and assisting in the preparation of food items. Both have been provided with training on Food Borne Illness and have signed an employee Illness Reporting Agreement form.
Discussed preparation of the sanitizing sink solution with the certified food manager. Informed her that the water temperature should be a minimum of 75 F and not cooler. The water temperature was cooler but the quaternary ammonium solution was adequate at 200 ppm.

02/04/2014Routine
The purpose of today's visit was conducted a follow-up inspection to the Risk Factor Assessment made on October 18, 2013. Found that Milk Cooler #2 and the McCall 1-door refrigerator have been repaired and have an ambient air temperature of 41 F or below. Observed milk in Milk Cooler #2 at 33 F. There is not any potentially hazardous food items currently stored in the 1-door refrigerator. The establishment is now in compliance for 4-501.11(A).

The purpose of this visit was to conduct a Risk Factor Assessment
In addition to the violation cited above, the following violation was observed:
4-501.11(A) EQUIPMENT IN GOOD REPAIR/OPERATION
Observation: The following refrigeration units are not operating properly and are not able to maintain cold food at 41 F or below: Milk Cooler #2 and McCall 1-door refrigerator (no PHFs currently stored in this unit).
Correction: Repair/adjust these units so that they are able to maintain food items at 41 F or below. Ensure not to use these units to store potentially hazardous food items in until successful repair has been made.
Please fax a copy of the repair invoice to the Health Department . Fax number is 703 385-9568. A follow-up inspection will be conducted on or about October 25, 2013 to re-examine the refrigeration units.

  • Critical: Cold Holding of Potentially Hazardous Food at 41°F or less (corrected on site) (repeated violation)
    Observation: The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: Milk in Milk Cooler #2 located at the right side of the front serving line is 42 F.
    Correction: Potentially hazardous foods (time/temperature control for safety food) shall be held cold at a temperature of 41°F or below unless the permit holder is using "time as public health control" as specified under 3-501.19 to limit bacteria growth. MILK WAS PLACED IN MILK COOLER #1.
10/18/2013Risk Factor
Conducted a follow-up inspection to determine the status of repair to milk cooler #2. Found that the unit is cooling to 40 F and milk stored in the unit is 41 F. Thus, compliance for section 45-4-501.11(A) has been met.

The purpose of this visit was to conduct a routine inspection. Found that milk cooler #2 is not capable of maintaining milk at 41 F or below. Unit is to be repaired. Follow-up inspection will be conducted after Spring Break on or about April 1, 2013.
  • Critical: Cold Holding of Potentially Hazardous Food at 41°F or less (corrected on site)
    Observation: The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: milk at 43 F in Beverage Air Milk Cooler #2 (right of service line).
    Correction: Potentially hazardous foods (time/temperature control for safety food) shall be held cold at a temperature of 41°F or below unless the permit holder is using "time as public health control" as specified under 3-501.19 to limit bacteria growth. Milk was placed in the McCall 2-door upright refrigeartor.
  • Equipment / Good Repair / Operation
    Observation: The following refrigeration unit is not operating properly and is unable to maintain cold food at or below 41°F: Milk Cooler #2 at right end of the front service line.
    Correction: Repair/adjust the unit so it is able to maintain foods at or below 41°F. Do not use the unit to store potentially hazardous foods while it is not operating properly.
