Ms. Murrell is a new Cafeteria Manager and has yet to take the Certified Manager course. Information was given during the inspection. The facility is clean and organized. One milk well was holding at 47 degrees during the last lunch. Please evaluate this machine and repair if needed. During the inspection, employee health, hand washing, and no bare hand contact with ready to eat food was also discussed. The permit was issued. The emergency response plan was read and signed also. Thank You.

    Correction: Obtain a valid food service managers card.

Discussed observations with CFM. Good temperature logs were being maintained (cooking, reheating, refrigeration). The facility was clean and organized.
  • Equipment - Good Repair and Proper Adjustment (repeated violation)
    Observation: The door gaskets of the Traulsen 3-door lowboy refrigeration unit are torn.
    Correction: Repair or replace the above mentioned equipment's door gaskets in accordance with the manufacturer's specifications.
  • Warewashing - Mechanical Warewashing Equipment, Hot Water Sanitization Temperatures (corrected on site)
    Observation: The mechanical dish machine was not operational. The CFM implemented single service/use articles and manual ware washing procedures.
    Correction: Immediately discontinue the use of the machine until it is operating in accordance with minimum requirements. Initiate manual wash, rinse, and sanitize method to properly clean and sanitize equipment and utensils.
  • Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils
    Observation: The nonfood-contact surfaces of the following equipment were observed soiled with an accumulation of dust, dirt, food residue, and/or other debris: The bottom shelf and door gaskets of the Traulsen 3-door lowboy refrigeration unit.
    Correction: Maintain nonfood-contact surfaces of equipment clean.
  • Physical Facilities in Good Repair
    Observation: The ceiling in the employee's rest-room was not maintained in good repair. The walls and pipes in the mechanical dish machine's room had paint peeling and are no longer smooth or easily cleanable.
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.
  • Ventilation Systems - Cleaning Ventilation Systems; Nuisance and Discharge Prohibition (repeated violation)
    Observation: Intake, exhaust air ducts and kitchen fans are not being cleaned
    Correction: Clean intake and exhaust air ducts and change filters so they are not a source of contamination by dust, dirt and other materials. Clean the kitchen fans so they are not a source of contamination.
