Foods were being placed on baking sheets in preparation for dinner and doors to refrigerator had also been open. Bacon and chocolate shake product had just been placed into refrigerator (rechecked at end of inspection and temp inside refrigerator had dropped to 52F) Kitchen A/C units in process of being replaced so kitchen also very warm--using portable A/C units and fans to help cool kitchen down. Inspection of kitchen during a gastrointestinal outbreak. 3-basin sink concentration at 300-400ppm, heat sanitizing dishwasher sanitizing at 160F. Asked PIC to obtain the heat sanitizing test strips. PIC has reiterated to employees the importance of handwashing and proper glove use. NO employees have been ill. They have all been advised to be very observant of their health and to stay home if they don't feel well or if they begin feeling ill they are to tell the manager and leave immediatly.
