    The waste pipe from the dishwashing machine is too long and falls into the floor sink. Person in charge contacted a Repairman immediately and the pipe's height will be adjusted later today.
  • Information: *PRIORITY AND PRIORITY FOUNDATION ITEMS*  All items that are marked *priority* or *priority foundation* must be corrected IMMEDIATELY or have an approved alternative procedure in place which must be corrected within 14 days of the designated time period.   • Rule Violation and Requirement: VIOLATION OF SECTION 3-501.14 *PRIORITY* Cooked potentially hazardous food is improperly cooled, specifically:
    Rice that was cooked about 7 hours ago is cooling in a very deep bucket in upright glass door refrigerator and it temped at 57F. Correction: Person in charge discarded the rice during inspection. In the future be sure to cool rice in ice bath to reach the required temperature.
  • Rule Violation and Requirement: VIOLATION OF SECTION 3-501.16 *PRIORITY* Potentially hazardous food is not maintained at proper hot or cold holding temperatures, specifically:
    Foods in 2-door prep refrigerator temped at: sour cream-50F, eggs-49F, salsa-50F, cheese-50F. Correction: Person in charge discarded these foods during inspection. Also, potentially hazardous foods will not be stored in this refrigerator until it is repaired.
  • Rule Violation and Requirement: VIOLATION OF SECTION 3-501.15 *PRIORITY FOUNDATION* Incorrect methods are used to cool potentially hazardous foods, specifically:
    Observed boiled enchilada sauce and cooked beans cooling in ~10 inch bucket and their temperatures were at 57F and 88F respectively. Correction: Person in charge transferred these into ice bath during inspection.
