Rule Violation and Requirement: VIOLATION OF SECTION 4-702.11 *PRIORITY* Food-contact surfaces of equipment and utensils are not sanitized after cleaning, specifically: I observed utensils being used and then sprayed off at the three compartment sink and then being put away as clean. The operator was instructed to wash, rinse, and sanitize all dishes and utensils using the three compartment sink. Please read below:

Rule Violation and Requirement: VIOLATION OF SECTION 5-202.13 *PRIORITY* An air gap is not provided between the water supply inlet and the flood level rim of the plumbing fixture or equipment, specifically: The head of the pre-wash sprayer wand is not being kept above the flood rim of the three compartment sink. Keep this item out of the sink and above the rim. Call a plumber if necessary.
