  • Rule Violation and Requirement: VIOLATION OF SECTION 3-501.16 *PRIORITY* Potentially hazardous food is not maintained at proper hot or cold holding temperatures, specifically:
    The front salad make cooler observed holding shredded cheese at 44F, crumbled blue cheese 49F, and bean sprouts at 44F. Operator iced bathed these item after discussion. These foods were not out of temperature control for longer than 4 hours. Internal temperature of the unit observed at 38F. Try and keep the main cover closed more often and adjust the machine if needed. This unit should work without temperature problems despite being left open. Please read below:
  • Rule Violation and Requirement: VIOLATION OF SECTION 4-602.13 Nonfood-contact surfaces are not cleaned at an adequate frequency, specifically:
    Beverage racks need deep cleaning to remove dust and debris. Pipes under the dishwasher and the wall under the machine needs degreasing.
  • Rule Violation and Requirement: VIOLATION OF SECTION 6-501.11 Physical facilities are not maintained in good repair, specifically:
    Grout and tile in the kitchen are not in good repair. Food debris is getting caught in the cracks as well as standing water. In addition, a bad odor was observed in the kitchen from decaying food in the grout lines that cannot be mopped out. Please repair to eliminate this problem. This is a repeat violation and has been cited on multiple inspections. Reinspections maybe necessary. Please be aware of reinspection fees.
  • Information: Cold Food Temperatures. Temperature of 41°F(5°C) or colder is required. Based on thermometer accuracy, two degrees F or one degree C tolerance is given.
    Walk in cooler produce 37F. Prep cooler pasta 41F, display cooler milk 40F.
  • Information: Hot Food Temperatures 135°F or (59°C) or warmer required. Two degrees, 2°F (1°C), of tolerance is given based on thermometer accuracy.

    The single door pasta cooler observed holding wheat noodles at 47F. The foods inside the unit observed holding at 41F. The food was discarded after discussion. Please monitor the pasta in the prep top to hold below 41F. The machine may need adjustment. Please use signs and temperature logs to track pasta temperatures. Please read below:
  • Rule Violation and Requirement: VIOLATION OF SECTION 4-501.11 Equipment is not maintained in good repair or according to manufacturer's recommendations or cutting parts of can openers are not kept sharp, specifically:
    The faucet at the handwashing sink up front is leaking hot water. This will diminish the hot water capacity of your facility and wastes enormous amounts of energy and water and adds to wear and tear of your water heater. Please repair as soon as possible.
  • Rule Violation and Requirement: VIOLATION OF SECTION 4-602.13 Nonfood-contact surfaces are not cleaned at an adequate frequency, specifically:
    The walk in cooler racks have green and white fungal growth inside on the rack surfaces. Each rack must be removed and cleaned to avoid food contamination. Clean the rack using a three step method such as, 'wash, rinse, and sanitize.' This problem was very extensive in the walk in cooler. Keep all foods in covered containers. I will be back to recheck this item unannounced at a later date.
