Observed tomatoes held at top side of the 3-door prep cooler being held at 50°F. CORRECTION: Operator immediately discarded tomatoes upon request. Operator and all employees were educated on the importance of maintain PHFs at below 41°F and conversely above 135°F for hot holding foods in their native language (Spanish).

Observed rice, beans, and meat without any visible date-marks. CORRECTION: Operator was unaware that items in coolers had to be date-marked as she was not the usual employee at this facility. Operator and all employees were educated on the importance of date marking all ready to eat potentially hazardous foods in their native language (Spanish). Operator understood and immediately date-marked all foods in cooler.

No test kits/test papers were available for measuring concentration of sanitizing solutions. Operator stated they had ran out and would send out an employee to buy them.
