    Observed in the walk in cooler, 47°F ambient air temperature, hummus 46°F, cole slaw 46°F, cottage cheese 46°F CORRECTION: Cottage cheese, hummus, feta cheese and coleslaw were discarded. PIC stated the walk in cooler will not be used for potentially hazardous foods. He will call Washington County if the cooler will be used for potentially hazardous foods so it can be checked to ensure it is holding at 41°F or below.

    Heavy build up of slimy material observed inside the soda gun nozzle. Please read below.

    kitchen prep cooler holding temperature at 48 F and the products inside the prep cooler are held at above 41F including cheese 52F, sliced tomato 50F, sliced meat 50F The operator discarded all potentially hazardous food at the time of inspection. ** Please be advised that this prep cooler may not be used to hold potentially hazardous food until serviced and proven that the cooler is capable of holding the temperature at or below 41 F at all times.
