Observed the shelving unit below the Merry Chef oven taped with a cardboard box that is then used to store food machine equipment on top of the cardboard. Please remove all cardboard throughout facility that is used on food storage shelving units. Please read below.

There was no chemical test kits or test strips available at facility to measure the concentration of quaternary ammonium. CORRECTION: PIC immediately called another manager to pick up a box of test strips prior to coming in to work.
- Information: Cold Food Temperatures. Temperature of 41°F(5°C) or colder is required. Based on thermometer accuracy, two degrees F or one degree C tolerance is given.
Walk-in cooler: Pico de gallo 41°F. Prep-top cooler (in front): Pico de gallo 37°F. Coca-Cola display cooler: Ambient air 35°F.
