Crepe cookers clean and in good condition.Handsink stocked and accessible. 3 compartment sink operational - drains properly. Dish machine @ 50ppm. Customer area clean and well maintained. Observed proper food handling; handwashing; and gloves use/changes and discussed with owner no band hand contact to ready to eat foods. Floors & restroom clean. No issues.

Reach in coolers @ 40 f; Cheese 38 f; Chicken (precooked) @ 38 f; Fruit 38 f. Top of makeup cooler clean - all serving utensils clean and stored properly. Crepe area clean. All crepe equipment clean and well maintained. Hot hold: Chorizo mix @ 142 f.Microwave; coffee area clean and well maintained. Handsinks stocked properly and accessible. 3 compartment sink operational. Dish machine @ 50ppm. Counters; floors; and customer area clean and well maintained. All chemicals stored in area away from food products. Hi-chairs clean and well maintained. Bathrooms clean and stocked properly.

Notes:Refrigerators @ 40 f. All thermometers inside. Reach in coolers @ 40 f. Prep areas - ok. Handsinks stocked properly and operating properly. 3 comp sink operational. Floors and counters - ok. **Clean facility before friday. Clean inside cabinets; wipe surfaces; and floors. **Silicone or caulk counters by coffee area & by handsink. Discussed area with James. **Dish Machine - still needs to be worked on and dish machine will need to be re-inpsected before opening to public. Re-inspection friday morning.
