Observed one dishwasher not dispensing proper sanitizer concentration. Facility has 2 dishwashers in bar area and will use second dishwasher only for glasses until other unit is repaired. Do not use dishwasher until it has been repaired and is dispensing 50-100ppm chlorine.

Observed sanitizer buckets without residual and wiping cloths stored on counter. Damp wiping cloths must be stored in sanitizer solution to prevent bacterial growth. Per operator; sanitizer buckets are changed once per 8 hour shift. Change sanitizer buckets as often as needed to maintain proper sanitizer residual (200-400ppm quat or 50-100ppm chlorine).
