**CDC Risk Factor Violation 20 A_COLD HOLDING**:
• Food items stored on the top pizza prep reach-in were above 41f. Air temperature was 45f.
3-501.16 Potentially Hazardous Food, Hot and Cold Holding.
(A) Except during PREPARATION, cooking, or cooling, or when time is used as the public
health control as specified under § 3-501.19, and except as specified in ¶¶ (B) and (C),
POTENTIALLY HAZARDOUS FOOD shall be maintained:
(1) At 135 degrees F or above, except that roasts cooked to a temperature and for a
time specified in ¶ 3-401.11(B) or reheated as specified in ¶ 3-403.11(E) may be held at
a temperature of 130 degrees F; or
(2) At 41 degrees F or less.
(B) Shell EGGS that have not been treated to destroy all viable Salmonellae shall be stored
in refrigerated EQUIPMENT that maintains an ambient air temperature of 41°F or less.
**CDC Risk Factor Violation 22 A**:
• Some pizzas in the display area were below 135f. The requirements for time as a public health control were not being followed.
WFC 3-501.19 Time is not being properly used as a public health control. If time only, rather than time in conjunction with temperature, is
used as the public health control for a working supply of potentially hazardous food before cooking, or for ready-to-eat potentially hazardous
food that is displayed or held for service for immediate consumption:
(1) The food shall be marked or otherwise identified to indicate the time that is 4 hours past the point in time when the food is removed from
temperature control,
(2) The food shall be cooked and served, served if ready-to-eat, or discarded, within 4 hours from the point in time when the food is removed
from temperature control,
(3) The food in unmarked containers or packages or marked to exceed a 4 hour limit shall be discarded, and
(4) Approved written procedures shall be maintained in the food establishment and made available to the regulatory authority upon request.
Violation 47 A**:
• Racks in the walk-in cooler were not clean to sight and touch.
4-601.11 Equipment, Nonfood-Contact Surfaces
(C) NonFOOD-CONTACT SURFACES of EQUIPMENT shall be kept free of an accumulation of
dust, dirt, FOOD residue, and other debris.
Violation 53 Q:
• Replace the tile around the new grease trap.
6-501.11 Repairing.
The PHYSICAL FACILITIES shall be maintained in good repair.
4-compartment sink, J-512 sanitizer, recorded 200ppm of sanitizer in the final rinse.

At the time of this inspection, the cafe' was closed. It will re-open tomorrow.
The entire cafe is in the process of being cleaned. Equipment noted during my inspection of 1-14-09 has been cleaned.
The rear prep area floor has been repaired.
The pizza prep cooler is unplugged. The Manager states that she will not make pizzas until the cooler is repaired.
The snack bar is no longer in operation. All equipment has been removed. There are no plans to reopen it.
