    Correction: Do not store shakers inside container of cinnamon. Change methods or procedures to protect foods from contamination.

    Observation: The interior and exterior of the dish machine has greasy buildup and is not cleaned thoroughly before use.
    The ductwork in the hood above the dish machine has a greasy buildup.
    Correction: Clean warewashing machine and drainboards or other equipment before using.
    Duct above dish machine needs professional cleaning.
  • NON-FOOD CONTACT SURFACES - CLEANING FREQUENCY
    Observation: The inside of the pizza prep cooler, especially the fan housing areas, is not cleaned on a frequent basis.
    The hand washing sinks, soap and towel dispensers are not cleaned frequently.
    Correction: Clean all equipment on a routine basis to prevent accumulation of soil residues.

    Observation: The dishwashing area has a foul odor, especially around the floor trough and grease trap. The dishmachine has a greasy buildup inside and outside the machine. Food was left in the dishmachine strainer overnight.
    Correction: Thoroughly clean warewashing machine, compartments of sinks, floor drains and troughs, utensils, drainboards or other equipment, before leaving at night. Grease trap may need servicing.

Every time I went to cicis, I was greater with great respect from brad the manager and the restaurant was very clean and had a lot of pizza choices to choose from!
