- 4-602.11 - the same gloved hand that contacts the plastic handle to the hot holding tray where the cooked burger's are placed. Contaminating the gloved hands of employee responsible for assembling the ready to eat components in completing the making operation. Correction made: To prevent the plastic handle to the plastic warming trays from becoming contaminated the employee cooking the raw meat will only use tongs at this time to handling the frozen raw meat patties when retrieving from the cooler and when placing on the grill. There by keeping their gloved hands and the handles to the warming trays free from raw meat soiling and cross-contamination between food handlers.
