- 5-402.11 - the 3-compartment Sanitize sink which is directly plumbed to the floor drain is used for sanitizing washed and rinsed utensils, plates, cups and pans and not used for food preparation. That if future food preparation was being considered using the rinse sink or sanitize sink. They would first safe waste that sink through use of an air gap 2 1/2 times the diameter of the drain pipe above the rim of the receiving catch basin.
