    Observed at time of inspection pico de gallo at 45-47 F, Pico was prepared at 8:30 that morning. Also in cooler lettuce, salsa and corn at 41 F. Pico was placed in plastic containers, was covered by a lid and was approximately 2.5 inches thick. All potentially hazardous cold food should be cooled so it is reaching 41 F within 4 hours. It is recommended that foods that are being cooled are stored in metal containers without lids until they reach 41 F or below. Pico was voluntarily discarded at time of inspection. Corrected after discussion with employees. Corrected.
