- Observed at time of inspection in prep cooler pepperoni at 50 F, sausage 47 F, ham 47 F, cheese 44 F, hot dog 46 F. all ready to eat potentially hazardous cold food should be held at 41 F or below. Food had been in cooler for 3 hours. Food was moved to walk in cooler for rapid cooling. Discard any potentially hazardous cold food that has been out of temp for more then 4 hours. Correct by repair/replacing prep cooler so that it holds potentially hazardous cold food at 41 F or below. A follow up will occur in about 10 days.,

- Comment:
- Observed at time of inspection mops in were leaned up against the wall with mop head rest on the floor drying. Mops should be stored in a manor where they can dry without contamination surfaces. Store hanging above mop sink. Corrected at time of inspection.
- General violation description:
- 6-501.16 - After use, mops shall be placed in a position that allows them to air-dry without soiling walls, EQUIPMENT, or supplies.
