    Observation: There are ready-to-eat cheeses stored under raw shell eggs in the Davian's walk-in cooler.
    Correction: Reorganize storage so that ready-to-eat foods are stored above raw animal food and raw vegetables. Discard ready-to-eat foods that show evidence of contamination.
  • EATING, DRINKING, OR USING TOBACCO
    Observation: Employee beverages noted in several coolers above food product.
    Correction: Keep employee beverages in a designated area on the lowest shelf where it cannot contaminate food or clean equipment.

  • PROPER COOLING METHODS - CRITERIA
    Observation: Chop Suey noted cooling with the plastic wrap and a lid on top. Discussed proper cooling techniques to ensure that the potentially hazardous foods cool from 135 F to 70 F in 2 hours and from 70 F to 41 F in an additional 4 hours. It was explained that the food is either reheated for same day service if needed or given to the employees. The Commissary Director voluntarily discarded the food as a precaution since the person that cooked the food had left for the day.
    Correction: Adjust methods or procedures to facilitate cooling as described in 3-501.15.
  • FOOD CONTAMINATION PREVENTED - MISCELLANEOUS CONTAMINATION
    Observation: Potatoes are subject to potential contamination by being rinsed in the mechanical dish machine.
    Correction: Wash potatoes in the approved food prep sinks.
  • EQUIPMENT AND UTENSILS - GOOD REPAIR
    Observation: The steam box was observed leaking water from the back of the unit.
    Ice accumulation in the Davian's cooler is allowing too much moisture to build up. Containers noted with mildew/mold on the outside.
    Correction: Repair or replace equipment to good condition or remove from premise.
