- WAREWASHING - SANITIZING SOLUTION - TESTING DEVICES (repeated violation)
Observation: A test kit is not available for checking sanitizer concentrations.
Correction: Provide a test kit or other device for measuring the concentration of sanitizing solutions.
- CERTIFIED FOOD MANAGER – REQUIREMENT (repeated violation)
Observation: There is no Wisconsin Certified Food Manager for this establishment.
Correction: Provide a Wisconsin Certified Food Manager and post the state certificate in the food establishment within 30 days.
- PACKAGED AND UNPACKAGED FOOD - COVERED CONTAINERS OR WRAPPING
Observation: Can of sausage gravy was observed to be unwrapped or uncovered on the counter in the laundry room.
Correction: All foods that are not part of a cooling process shall be covered at all times to prevent cross-contamination. If cross-contamination is evident, discard suspected foods.
- NON-FOOD CONTACT SURFACES - CLEAN (repeated violation)
Observation: Non-food contact surfaces of cupboards on continental breakfast are soiled both inside and outside. Also the outside of the coffee pump pots are soiled.
Correction: Clean and remove dust, dirt, food residue, and other debris from all non-food contact surfaces of equipment.
- GARBAGE/REFUSE - INSIDE STORAGE AREAS, CAPACITY AND AVAILABILITY
Observation: Waste receptacles located in the laundry room are overflowing. This is the area where food prep is being conducted.
Correction: Receptacles shall be in sufficient quantity to hold all the waste that accunulates. Provide additional covered waste receptacles and promptly remove waste when full.
- FLOORS, WALLS AND CEILINGS - CLEANABILITY
Observation: The floor in the laundry room is very soiled and this area is being used to prep food for the continental breakfast.
Correction: Provide floors, walls, and ceilings that are designed, constructed, and installed so they are smooth and easily cleanable. Remove carpeting and replace with tile flooring that can be easily cleaned and maintained.
