The walls and ceilings shall be in good repair and easily cleaned. THE NORTH AND EAST WALLS BY THE THREE COMPARTMENT SINK ARE IN POOR. INSTRUCTED TO REPAIR SAME. CLEAN THE CEILING VENTS IN PREP AREA HAS DUST BUILDUP ON THEM.
Cleaning equipment shall be properly stored away from food, utensils, equipment, and clean linens. CLUTTER IN THE STORAGE CLOSETS. INSTRUCTED TO CLEAN AND ORGNIZE SO NO INSECTS OR RODENT HARBORAGE.
The flow of air discharged from kitchen fans shall always be through a duct to a point above the roofline. PIPE UNDER THE TWO COMPARTMENT SINK IN POOR REPAIR. INSTRUCTED TO REPAIR OR REPLACE SAME.
All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. CLEAN THE HOOD ABOVE THE COOKING EQUIPMENT HAS DUST AND DIRT BUILDUP.
