The walls and ceilings shall be in good repair and easily cleaned. Must clean all unclean walls throughout prep area and maintain.
All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. The following not clean- interior of cabinets/reach in coolers with accumilated food debris at prep and front area, interior of ice machine with slight lime build up, notice foul odor from grease trap. Instructed manager to clean and maintain all unclean equipment.
