All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. Must clean and sanitize bar gun holders and maintain to help prevent potential pest harborage. The walls and ceilings shall be in good repair and easily cleaned. Must recaulk prep hand washbowl to wall(adjacent to 1st floor dishmachine), replace damaged ceiling tiles at 3rd floor prep area/liquor storage room also must repair damaged wall (by floorbase)next to convection oven. Shielding to protect against broken glass falling into food shall be provided for all artificial lighting sources in preparation, service, and display facilities. Observed one missing light cover above 1st floor dishmachine. Must provide and install light cover. Ventilation: All plumbing fixtures, such as toilets, sinks, washbasins, etc., must be adequately trapped, vented, and re-vented and properly connected to the sewer in accordance with the plumbing chapter of the Municipal Code of Chicago and the Rules and Regulations of the Board of Health. Must repair leaks at lower level prep area 2-compartment sink faucet and at Junior Wells bar middle pipe of 3-compartment sink.
