FOUND APPROXIMATELY 55 LBS OF SLICED TOMATOES,TUNA AND ROAST BEEF AT IMPROPER TEMPERATURES RANGING BETWEEN 50-53.9 DEGREES F. MUST MAINTAIN POTENTIALLY HAZARDOUS COLD FOODS AT 40 DEGREES F AND BELOW. CRITICAL CITATION ISSUED 7-38-005A. (PER EMPLOYEES ON SITE, ABOVE MENTIONED FOOD ITEMS WERE PREPARED AT 9:00AM ON 5-25-2010. HOWEVER, CDPH FOUND NO TIME AND TEMPERATURE LOGS OR LABELS TO REFLECT WHEN OR HOW THE PRODUCT WAS HANDLED.)
All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. DETAIL CLEAN ALL PREP TABLES AND CUTTING BOARDS ON SITE. ALSO DETAIL CLEAN AND SANITIZE THE SLICER AND THE INTERIOR TOP PANEL OF THE ICE MACHINE. ALSO CLEAN INTERIOR OF TOILET IN WOMENS WASHROOM.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. DETAIL CLEAN FLOORS UNDER AND BEHIND COOLERS,SINKS AND ICE MACHINE AND REMOVE FOOD DEBRIS BUILD UP.
All parts of the food establishment and all parts of the property used in connection with the operation of the establishment shall be kept neat and clean and should not produce any offensive odors. OBSERVED EMPLOYEE BELONGINGS SCATTERED THROUGHOUT REAR STORAGE AREAS ON SHELVES,ON THE FLOOR,ON TOP OF COCA COLA CARBON DIOXIDE TANKS AND THROUGHOUT REAR. MUST PROVIDE MORE ADEQUATE SPACE FOR EMPLOYEE BELONGINGS. MUST BETTER ORGANIZE STORAGE AREAS.
