REMOVE EXCESS CARDBOARD IN STORAGE AREAS TO PREVENT PEST HARBORAGE. STORE MOP HEAD UPRIGHT TO PREVENT INSECT BREEDING.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. FLOORS NEED CLEANING UNDER ALL EQUIPMENT, SODA DISPENSER IN REAR (SYRUP SPILLS), ALONG WALL BEHIND TABLE IN OFFICE (DEAD ROACHES), BEHIND CARBON DIOXIDE TANKS IN REAR(DEBRIS), ALONG REACH-IN COOLER IN PREP AREA, ETC
All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. CLEAN CABINETS UNDER BEVERAGE MACHINE AND SHELVES UNDER PREP COOLERS.
The walls and ceilings shall be in good repair and easily cleaned. SEAL ALL OPENINGS ALONG BASEBOARDS IN ALL AREAS (NORTHWEST CORNER NEAR BREAD CABINET, IN REAR NEAR CARBON DIOXIDE TANKS, IN OFFICE, PREP, STORAGE, DINING AREAS, ETC)
Shielding to protect against broken glass falling into food shall be provided for all artificial lighting sources in preparation, service, and display facilities. REPLACE DAMAGED LIGHT SHIELDS IN PREP AREA. PROVIDE LIGHT IN WALK-IN FREEZER.
